Chocolate Banana Muffins

Prep time: 5 minutes | Cook time: 18 minutes. | Total time: 23 minutes | Yield: 16 muffins


These hearty muffins come together in just a few minutes, which makes them perfect for a weekday or weekend breakfast, or a tasty afternoon snack.


2 ripe bananas

2 large eggs

1/3 cup sugar

1/4 cup olive oil

1 tsp vanilla

1 cup flour

1/4 cup cocoa powder

2 tbsp flax seed meal*

2 tbsp brewer's yeast**

1 tsp baking powder

1 tsp baking soda

1 tsp salt

1 cup chocolate chips



  1. Preheat oven to 350 degrees. Line cupcake tin with paper liners.

  2. In small mixing bowl, whisk together flour, cocoa powder, brewer's yeast, flax seed meal, brewer's yeast, baking powder, baking soda, and salt, set aside.

  3. In large mixing bowl, smash bananas. Stir in eggs, oil and vanilla. Stir in dry ingredients. Fold in chocolate chips.

  4. Spoon muffin mixture into paper liners.

  5. Bake in preheated oven for 16-18 minutes. Muffins are done when a toothpick inserted into the center comes out clean.


*You can use whole flax seeds if you can't find meal (ground seeds).

**Also called nutritional yeast.
